ICED CHRISTMAS TREE,

.1 stick of butter (4oz)

1/2 cup superfine (caster) sugar

1 large egg, beaten

few drops of vanilla extract

21/2 cups all purpose flour

pinch of salt

christmas tree cookie cutter

1 tube ready-to-use decorating icing

colored balls

narrow ribbon

makes 20

preheat the oven to 375F (190C) in a bowl, beat the butter until soft. Add the sugar and beat until fluffy, then gradually beat in the egg and vanilla.

sift the flour with the salt and mix into the creamed mixture with a wooden spoon to make a soft dough. Wrap in plastic and chill in the refrigerator for 30 min.

roll out the dough thinly on a floured suface and cut out tree shapes, gathering up trimmings and re-rolling them.

Lift the shapes onto a greased baking sheet and pierce a hole at the top of each tree with a skewer. Bake for 8 to 10 minutes, then cool on a wire rack. Decorate with the icing colored balls. Thread a ribbon through the hole at the top of each one.
