Quick easy meals

I get most  of my recipes from the Six O'Clock Scramble, www.TheScramble.com.  The Scramble provides quick, healthy, and easy dinner recipes for busy families.  The recipes are kid-tested too!  Try recipes like baked chicken with apricot-dijon sauce, asian turkey burgers, salmon with maple-soy glaze, black bean burgers...and so many more!   Most recipes include less than 10 ingredients and take less than 30 minutes to make.

The Scramble comes in a weekly eNewsletter with 5 recipes AND a grocery list for the week.  or, there's a cookbook too if you'd rather choose your own recipes.  You can still log onto to the Web site get the grocery lists though.   Visit www.TheScramble.com and check it out.

Magic Meatballs.

4oog lean beef mince

1 onion finely diced

1\2 cup dried breadcrumbs

Salt and pepper(optional)

1TBSP dried basil leaves(optionel)

450g tomato pasta sauce.

1.preheat oven to 180c.

2.In a large bowl combine the mince,onoin.breadcrumbs,seasonings,and basil.mix well to combine.

Form into walnut sized balls.

Spoon tomato pasta sauce into ovenproof dish andtop with meatballs.Bake for 20-25 minsor until cooked through.

this recipe works wonders to get my 3 year old to eat meat.

I had bought a whole crab and no idea what kind of meal to make.  I would appreciate any ideas anyone has.

Carrot Apple Muffins

I adopted this from a non-vegan recipe on Wholefoods.com, and they were the best muffins I've ever made. They're yummy, super moist, and healthy to boot!
Equipment:
Muffin tin, 2 bowls, grater or food processor to grate carrots

Ingredients
1 1/4 cup flour (I used whole wheat pastry)
1/4 cup sugar
1 tsp cinnamon
1 tsp real vanilla extract
1/2 tsp non-aluminum baking powder
1/2 tsp salt (I actually forgot to put this in, but they turned out fine)
1 cup grated carrots (about 2 carrots)
1/2 cup unsweetened applesauce
1 banana, mushed with a fork until smooth
1/4 cup soy milk
1/4 cup oil

Directions
Preheat oven to 350. Spray muffin tin w/ cooking spray. In a large bowl, combine dry ingredients. In a seperate bowl, combine carrots, applesauce, banana, and remaining wet ingredients. Add half the wet to the dry, stir until blended, then add the rest. Spoon into muffins cups and bake about 15-20 minutes or until a toothpick inserted in the middle comes out clean.

my addition:
i had to bake for 30 minutes in two mini muffin tins (one was half full). i had to let sit for 30 minutes before they were removable. otherwise - yummy, moist and chewy.
