vegan carrot apple muffins

Carrot Apple Muffins

I adopted this from a non-vegan recipe on Wholefoods.com, and they were the best muffins I've ever made. They're yummy, super moist, and healthy to boot!
Equipment:
Muffin tin, 2 bowls, grater or food processor to grate carrots

Ingredients
1 1/4 cup flour (I used whole wheat pastry)
1/4 cup sugar
1 tsp cinnamon
1 tsp real vanilla extract
1/2 tsp non-aluminum baking powder
1/2 tsp salt (I actually forgot to put this in, but they turned out fine)
1 cup grated carrots (about 2 carrots)
1/2 cup unsweetened applesauce
1 banana, mushed with a fork until smooth
1/4 cup soy milk
1/4 cup oil

Directions
Preheat oven to 350. Spray muffin tin w/ cooking spray. In a large bowl, combine dry ingredients. In a seperate bowl, combine carrots, applesauce, banana, and remaining wet ingredients. Add half the wet to the dry, stir until blended, then add the rest. Spoon into muffins cups and bake about 15-20 minutes or until a toothpick inserted in the middle comes out clean.

my addition:
i had to bake for 30 minutes in two mini muffin tins (one was half full). i had to let sit for 30 minutes before they were removable. otherwise - yummy, moist and chewy.

Greek-style pasta roll-ups ( vegetarian )

 

recipe from: Taste the World of Sunrise Tofu cookbook

Serves 4

Ingredients:

1/2 small onion , chopped

2 cloves garlic, minced

500 ml (2 cups) fresh spinach , chopped

30 ml (2 tbsp.) vegetable oil

1 300g.pkg. (10oz.) soft tofu, drained

125 ml (1/2 cup) feta cheese

6 lasagna noodles , cooked

500 ml ( 2 cups) pasta sauce

grated parmesan cheese ( optional)

1. In a skillet, saute onion, garlic and spinach in vegetable oil.

Add tofu and feta cheese, and mix well.

2. Place a spoonful of mixture on each noodle, and roll up

firmly.

3. Spread 125 ml (1/2 cup) of pasta sauce in a shallow baking dish.

Place roll-ups seam side down. Pour remaining sauce over roll-ups

and bake covered at 180C (350F) for 25 min.

4. Remove cover. Sprinkle parmesan cheese on top and bake

for another 5 min.

This made eight rolls and I used a big jar of prepared pasta sauce

(I was too lazy ; P)
