Mock Fish

I have heaps of tricks for getting my 2 year old to eat - it's not just vegies he won't eat, but if he's in one of those fussy moods (which he is 6 out of 7 nights lately) he won't eat anything much. These are one of his favourites that he will always eat:

2 grated potatoes
1 grated carrot
1 medium zucchini grated
1/2 cup grated cheese
1/2cup plain flour
1 or 2 eggs

mix everthing together so it's nice and sticky, heat a little oil in a frying pan, place spoonfulls of mix in pan & flatten out so they can cook through. Cook until brown and crunchy on both sides.

You can add anything to these really & depending on how many you want to make you may need a little more flour & egg - you can also use milk if anyone is allergic to egg.

grated vegies (your own preference) mashed sweet potato, chicken stock and rice. Roll into little balls dip in egg and then breadcrumbs. You can fry them or spray with olive oil and put in the oven until crisp. The amount of ingredients depend on how many u want to make. I just chucked it together and my daughter loved them...yippeeee!!!!

Does anyone have any tasty salad ideas? My daughter will not eat tomatoes, lettuce or carrot. Actually no salad foods whatsoever.

One of the easiest foods i find to hide vegies is mince. Just add grated vegies, or finely chopped, to lasagna, spag or rissoles.

creamy tuna mornay

my daughter absolutely loves this!!!

melt 2 tblspns butter in large saucepan. Add 2 tblspns plain flour and cook 2 mins. Add grated carrot and zuchinni and chopped onion or shallots. Add approx 2 cups milk and 1/2 cup cream slowly until sauce thickens. (if too runny thicken with a bit of cornflour)Add a tin of creamed corn, a tin of tuna and a good handful of grated cheese. Lastly add approx 1 - 2 teaspoons of chicken stock powder. I usually serve mine with spiral pasta but it is also yummy with rice or mashed spud.
