Speckled Bubble Bars- (LCM BARS)

Presentation time : 20 minutes + 1-2 hours setting..

Total cooking time 5 minutes.. Makes 24...

1 1/2 Cups of Marshmallows

60 g Butter

2 1/2 Cups of Rice Bubbles

1/2 Cups of Hundreds and thousands..

1. Line a 18 x 28 cm shallow pan with foil or baking paper grease lightly.. Place Marshmallows and butter in the pan.. Stir over low heat until both has melted.. Remove from heat(adult supervision)

2. Place Rice Bubbles and Hundreds and Thousands in a large Bowl.. Pour in Marshmallow mixture and mix well..

3. Pour Mixture into prepared tin, smooth surface.. Allow to  cool and set in fridge..

When cool cut in squares..

I also found that old foil containers that lasagne  comes in, is good to use those if you dont have a pan big enough..

Enjoy and it sure beats the cost of them in the shops...

Grandmas Noodle Patties...

1pkt 2 minute noodles
3 eggs
1/2 cup grated cheese
diced bacon- we used half cup

Cook noodles per instructions  and let cool down.

Add eggs,cheese and bacon and combine mixture together,..

Add a tablespoon of mixture into a hot non stick frypan and cook on both sides to brown...

Was a huge hit at our new years eve BBQ and we got the recipe from caitlyns school friend grandma,......

Choolate Truffles

1 Tin condensed milk
1 1/2 tablespoons of Cocoa
1/2 packet of biscuits...- Crushed..(arrowroot biscuits)
1 teaspoon of coconut..

Mix al Ingredients Together,
Shape in small Balls....
Roll in Coconut....

Stick in container and in the fridge, and should last a few days....

I don't know about all of you but in the summer I HATE turning on the stove, so baking a snack with my son is basically a no go.  Two yrs ago as a gift I received an ICE CREAM MACHINE...I am a huge sweets fan but I also have high cholesterol so I started experimenting. My son helps me all the time with it and at the same time is learning a bit of science as he watches the liquids turn into solids right before his eyes...We make sorbets, low-fat ice creams, and ices all %100 natural no preservatives so its much better for you then most store bought and SO EASY...My son loves it and its a great way to make him a treat during those hot summer days...Just get the "container" out of the freezer, put it in the base, put in the ingredients, turn on and 30 minutes later its done and ready to serve....

my daughter has been helping me make gazpacho lately.  all you need is a blender and a not-too sharp knife for chopping.  at eight, she can easily cut things like cucumbers with no problem.

gazpacho ingredients--take all these items, chop coarsely and let you little one throw them in the blender and press the buttons:

6 or 7 ripe tomatoes
1 big cucumber
some sprigs of basil, a bunch of cilantro or parsley
handful of chives
1 red bell pepper
some crushed garlic
juice from one fresh lime
a splash of balsamic vinegar
salt and pepper to taste

there's not a hard and fast way to make gazpacho, so have fun letting your kids alter the portions so you can concoct your family's own special brand.  serve chilled with a basil leaf garnish.

1 can drained corn kernals

1 egg

combine and cook for 2minutes on both sides

my son loves this recipe and can almost make it by himself

Hi guys, Here's a sandwhich that my son loves. It's philly cheese (the spreadable kind) and fruit medley. Combine about 2 tablespoon of philly and a handful of the fruit in a bowl and spread onto bread. It's enough to make 2 sandwiches.

Thanks for the invite.  What an awesome group.  Thank you for inviting me.

Flapjacks are one of my personal favourites to make, it meets my sweet tooth and is a great treat for kids and guests.

Ingredients:
Porridge Oats - 125g
Margarine - 125g
Golden syrup - 75g
Sugar - 75g

Equipment:
Stove and saucepan or microwave oven with microwaveable bowl.
Oven
Woodenspoon to mix ingredients
Scales/measuring device - or guesstimate
Shallow baking tin with sides
Greaseproof paper

Instructions:
Heat the margarine, sugar and golden syrup on the stove or in the microwave until it is all melted together.
Line the tin with greaseproof paper
Mix the oats into the mixture
Put mixture into baking tray and press flat (this is important so ti sticks together at the end....lol)
Bake at 175C for 20-30 mins
Warning:  Timing is tolerant, but temperature is important
Slice into fingers/squares before it sets, but leave in tin
Leave to cool and set

Turn it out and enjoy!!

For an yummy alternative use
  • Honey instead of golden syrup,
  • Put in some small cut dried fruit
  • add choc chips for that extra special occasion

Golden Chicken Nuggets.

makes 12...

180g chicken breast mince

1/4 cup breadcrumbs

1 egg yolk

1 small potato grated

1 small onion grated

cooking spray.

1. Pre-heat oven to 180c.Line a tray with baking paper

2.Combine chicken mince,breadcrumbs,egg yolk,grated potato,grated onion,season with salt and pepper...

3.shape Tblespoons of mixture into nuggets,roll in breadcrumbs and place onto a prepared tray.

Bake for 20-25 minutes till golden brown....

Cheese MEN

1 Tablespoon butter

2 cups of self raising flour

1 cup of chedder chesse

3/4 cup of milk

sultanas for decorations.

1.Rub butter into flour until mixture resembles breadcrumbs and then mix in cheese...

2. Add milk and mix to form a soft dough.Knead lightly on a floured board.

3, Roll out  1cm thickness and cut into gingerbread men shapes.Re-Roll as necessary.

make faces and buttons using sultanas

4.Place on a buttered baking tray and bake at 200C for 15 minutes or until golden brown...

4 Cups rice bubbles

1 1/2 cups of icing suger

1 cup desiccated coconut

250g Copha

1pkt hundred and thousands

1.In a large bowl conmbine ricebubbles,icingsuger,coconut,and cocoa..

2.Melt Copha in a saucepan over lowheat till melted...Cool

3.Pour into rice bubble mixture and stir to combine.

4.Spoon into patty cases, and sprinkle with hundreds and thousands....Refrigrate.....

1x pkt vanilla cake mix.

Chocolate coating.

1 cup sugar

1/3 cup cocoa

1 cup water

1 tsp vanilla essence

2 cups coconut

1.Preheat oven and cook cake mix according to the instructions on the package...

2.Cut cakes into 24 pieces

3.prepare chocolate coating.Put suger,cocoa, and water into a small saucepan and bring to the boil.Cool.Remove from heat, and stir in vanilla essence.

4.Hold cakes with 2 forks and dip into chocolate mixture. Roll in coconut and place on wire rack to firm..put lamintons in fridge to set...

Microwave Jacket Potatoes

What You Need:

1 or 2 medium sized potatoes for person

Grated Cheese

Sour Cream

Bacon Pieces

Place potatoes in a microwave safe bowl and cover with water.

Microwave on high until the potatoes are soft. (A knife should go into it easily.)

When ready, cut potato into quarters to open it up.

Fill with grated cheese. Let the cheese melt a bit while you put the bacon pieces on a paper towel and microwave until cooked.

Add the sour cream on top of the melted cheese then top with bacon pieces.

Other toppings possibilities are:

Grated Carrot

Spring onions (diced)

Pineapple pieces

Cooked and diced onions

Cheesy bean jaffles..

4 slices wholemeal bread

15g butter.

220g baked beans.

1/4 cup of chedder cheese..

1. butter bread on one side and place 2 slices,butter down in preheated toasted sandwich maker.

2.Top with combined baked beans and cheese,cover with remaining bread,buter side up.

3.close the lid and cook until golden.

Aternative fillings....Cheese,ham, and tomato.

                                     ham and chesse

allow jaffa to cool before serving children..

1/2 cup of strawberries.

1.blend ingredients together until smooth.

2.Pour into tall glasses or cups and serve with a straw..

Shouldn't the title be recipee for disaster like it is in my house
Someones feeling often gets hurt in our house.....
Usually the daughters as even though I love her i really cannot stomach apple sludge again.....(apple crumble)
The sons is a little bit better his was apple crumble with toasted coconut on it yep he forgot to add the coconut so sprinkled it on the top.......
They both make a excellent cup of tea though and the son does a mean canned tomato soup to die for......
They often cook but the disasters usually out weigh the good...but still they try
God love them

Jelly Aquariums

What you need:

A plastic see through cup for each child
Blue or green jelly
Blue M&M's (Or anything to make the rocks at the bottom of the tank)
Gummy sharks
Water to dissolve the jelly

 In a mixing bowl, make the jelly as per the packet instructions

 Chill for 20 to 30 minutes.

 Press gummy sharks and blue M&M's into the Jelly.

 Return the Jelly to the refrigerator.

Chill for 3 to 4 hours.
