Recipe of the Week


My passion is cooking & baking I love it.  If I had the money I would go back to school to be a chef / baker.  I created this group so that at the start of ever week [Monday US time] I will be posting a meal idea from Appetizer to Dessert that kids will eat and actually ask to have again [obviously some of them will not please all kids but I will try].  During the week I will also put up postings of healthy snack ideas & recipes.  The postings will be of different meals from Breakfast - Dinner [and of course dessert]...Please also feel free to post your own delicious recipes or give me an idea of something to make and I will find a recipe for you. I HOPE YOU ALL HAVE A GREAT DAY

hi just started making pavlovas. mmmmmm........ Q any tips on keeping the height. It rises high just drops while its cooling. It still has at least an inch of fluffy marshmellow but i just want the height.

Zuccini slice

x2 sm zuccinis- grated

x1 onion finely chopped

x1 carrot -grated

x1 cup cheese- grated

x6 eggs

x4 rash of bacon diced

1/3 cup of oil

200g of corn from can

x1 cup S.R flour

Mix all together, pour into a baking dish and cook at 180 degrees until top is brown, which is about 30-40mins.

Jade loves it(14mths) so does hub. You can Freeze it, serve hot cold, what ever

Tasty little sausage rolls

Ingredients:

1kg SAUSAGE mince (not mince like u would use in spagetti bol)

1 cup tasty cheese grated

1 brown onion grated or finely chopped (grating is better)

3 eggs

2 tablespoons milk

3 slices of bread crust removed and diced

6 sheets of puff pastry (you may not use them all)

poppy seeds

salt and pepper

parsley

Method:

1. Preheat oven to 200 degrees celcius (180 fanforced)

2. Line baking trays with baking paper

3. Put oil in a frying pan and cook onion untill its translucent (clear) and set onion aside

4. Dice up the bread place in a bowl and add the milk set aside of 5 mins

5. meanwhile mix sausage mince, grated cheese, 2 eggs, onion, salt and pepper to taste, parsley to taste. then squeeze milk from the bread and mix in the bread.

6. cut pastry sheets in half and brush beaten egg down the long side of each half of pastery

7. fill pastery with the sausage mince mixture evenly and roll into a tube pressing the mixture evenly thru.

8. brush the top with egg and sprinkle with poppy seeds then cut into segments and big or as little as you like i normally do them about 3 centremeters long.

9. Bake for 20 - 30 mins or untill golden (you will need to do this in batches if your like me and can only fit two trays in your oven and this reciepe makes about 6 pastry sheets worth)

10. this makes about 50 little sausage rolls, i normally place into freezer bags and freeze in lots of 10 for a quick lunch time snack or for when visitors turn up unxpected or for a quick meal at night served with veges and mash!

to reheat i go strait from the freezer to the over for about 15 mins on 180. or u could nuke the in the microwave.

savoury muffins

Anyone have any recipes tried and tested  for savoury muffins with as many veg as possible, thinking of snack food for jade, whom is 14mths and eats everything lol

pumpkin bread

hi there, i make pumpkin bread alot for chloe and tobias for school lunches and for snacks at home for tobi, they both love it and its a quick easy snack.

ive alternated my recipe a bit for babies so if feeding to a bub if you prefer add apple instead of sugar for sweetness and only add one cup sugar or use 2 cups of "fake" sugar

this recipe is for two loaves

2 cups cooked pumpkin or canned

3 cups self raising flour

2 cups sugar

4 eggs beaten

1 cup veggie oil (i use olive whatever is there lol)

1 teaspoon salt

2 tablespoons nutmeg and cinamon

1/2 cup water

and 1/2 cup saltanas if wanted

preheat oven to 180 approx

stir together the flour, soda, salt, cinnamon, , nutmeg and sugar

add water oil  eggs and pumkin

mix well and add apple or saltanas here if u want

put in two greased bread pans and bake for bout an hour

ENJOY!

oh and dees way of doing it which im going to try is using a basic scone recipe and adding a can of pumpkin soup! sounds easy and yumm!

corn fritters

I got this outta my mag last wk, super easy n quick. My 1yr old loves em, so does hub

1x 310g can creamed corn, 1x 425g can corn, 1x cup flour, 2xeggs, 1/3 cup shallots, 1/3 cup basil (i put less)

Mix all ingredents , fry in in a well greased pan until golden on each side. makes about 20 small ones. Plus you can make em day before and heat them up. I served with mayo and sweet chilli

SPAGONAISE

i have dubbed it this! lol

its not my recipe it belongs to toosh i messed around with the pasta though so my baby can eat it too...

basically is spag bol or lasagne without pasta sheets and a bit easier for lil kids to tackle

1 onion

500 g mince

herbs, garlic

tom paste

half can of diced toms

can of tomoato soup

fry up the onion  and garlic, add mince adn herbs and fry till brown add tom paste and coat mince and cook for 2 mins, add half can of diced toms or dice your own and just cook for a bit longer, add tomato soup and leave to simmer for 20 mins

white sauce

butter

flour

milk ( and egg if you want)

melt butter add flour and add milk a bit at a time, then let simmer until thick, add egg at the end if wanted.

then

cook some pasta, i use maccaroni so my baby can eat it with us.

mix cooked pasta with spag sauce, cover with white sauce and maybe a cup of cheese depending on how big your baking dish is. cook in oven for bout half hour and voila! done!

my kids love this and i havent yet heard of a kid who doesnt lol.

its alot easier for them to feed themselves than lasagne but has that same great taste!

give it a go i ate 3 bowls lol

Fried Rice

One of Miss Caitlins favourite dinners at the moment is fried rice. So simple and easy to make and she gets to 'help'.

Cooking time: approx 15 - 20 mins.

Ingredients:
Cooked rice
chicken
ham or bacom
peas
frozen mixed veg
soy sauce
sweet chilli sauce
Salt & pepper
Chopped carrots

Basically whatever you want. I havent added quantities here as I dont really know, I just use whatever I have in the fridge and obvioulsy depends on how much you want to make.

Basically cook the rice beforehand and rinse and drain and put to the side. I usually scramble up some eggs first and put to the side to add at the end. Cook your other ingredients, eg bacon & any raw meat first. Then add crunchier vegies and finish with the lighter ones e.g peas.

Add the rice and some soy sauce. i also use a splash of sweet chilli for abit of flavour.

This is a healthy meal which is so pretty quick to make and freezes really well for later! Kids will love it and can help you make it. As I have been really vague here if you want some more precise measurements and cooking time please just email me.

The Start of Muffin Madness, One Muffin Recipe Each Day this Week

I had these muffins when I was in Elementary School at a friends church fair, they were so good and having high cholesterol my mom jumped at the chance to get the recipe for something healthy that I asked for more of [how strange :)] anyway Enjoy [I know I did then, and still do now] Oh a quick aside due to the honey in these, this recipe is not recommended for giving to children under a year of age

Healthy Whole Wheat Honey Wheat Germ Muffins [really yummy]

3/4 C
All Purpose Flour
3/4 C Whole Wheat Flour
2t Baking Powder
1/4t Salt
1 Egg
1/2 C Milk [we use skim]
1/2 C Honey
1/4 C Canola Oil
1/2 C Wheatgerm

Preheat Oven to 400'F
1. In a large bowl [or food processor for 10 pulses] stir dry ingredients
2.  In a small bowl mix well egg, milk, honey & oil.
3.  Make a well in the center of the dry ingredients and pour in wet ingredients.  Stir until blended
4.  Fill greased muffin tins 3/4 full
5.  Sprinkle tops of each with wheat germ
6.  Bake at 400 for 15-20 minutes
