Relatively good for you food that can be prepared, one-handed, last-minute, and in a pinch. Also tried and tested, fantastic recipes which you want to share.

Hi there, great ideas girls. I'm going to try the potato and zuc today. Thankyou. As we all love pizza I'm trying to come up with an idea on how to make one without tomato. Emily is allergic, although this appears to be the main base ingredient. She can take special cheese and other things. Many thanks girls, I'm at a loss. Suzy |

I love bacon carbonara pasta and was recently given yet another recipe to try..only this one actually tasted great..
In a frying pan, brown a diced onion, 5 sliced mushrooms and a packet of diced bacon. (really use just how ever much you like).
In another frying pan, pour in a 500ml tub of cream (no lite cream) and heat on meduim heat until it starts to bubble slightly. Pour in 3 whisked eggs and keep sauce mixture from setting by stirring. Once it has thickened and resembles a very, very runny scrambled eggs, pour bacon/onion/mushroom into cream and mix together.
Cook pasta and mix into cream!
How easy is that! |

These are the best way to get a bit of green into a little ones diet. Everyone in my family loves these and even my 17yr olds (mind u Ben hate vegies) friends come over with their hands out when they hear im making them!!! So easy to make and so easy to eat...
3x washed grated Zuchini's (skin left on)
3x medium potatoes peeled grated
1x egg
1/2 S/R flour
a pinch of minced garlic if desired
and salt and pepper if desired
Grate both potatoes and Zuchini's and place into a drainer and squeeze out as much juice as possible. Then place into a mixing bowl, add beaten egg and flour along with seasonings and mix till ingredients are combined. I find if the ingredients are not sticking together enough i add another egg. Place a good table spoon of the mixture into a hot frying pan of butter and oil, flatten down with the spoon and fry till golden brown, then flip over to cook the other side, just like pancakes. I cook them till their edges are crispy and place on towelling paper. You wont be able to stop at one!!!

Yesterday I was making Pikelets for arvo tea and the kids next door came round and said did my bubs want to come out and play. Of course he did! So my partner, bubs and the kids were outside playing while I made Pikelets.
When done I had buttered the pikelets and put them on a plate, carried them outside with a squeeze bottle of golden syrup. We sat on the ground while an adult put the golden syrup on and passed them around one by one. It was yummy and such a lovely time. Bubs loved the pikelets (with out the golden syrup of course).
I got this recipe from a web site called www.taste.com.au
1 Cup self rasing flour
1 tbs caster sugar
3/4 cup milk
1 egg
Sift flour and sugar and a pinch of salt
mix the milk and the egg together and then add to the dry ingredients and mix until smooth.
In a non sick fry pan. Put tablespoon drops of mixture in to the pan and fry until golden brown on both sides.
This recipe makes about 25 small pikelets. In the end when I used about half the mixture I added some more milk to thin it out a bit to make more.
Easy Peasy!!!! |

Sounds gross I know but absolutely gorgeous. When people ask what it is they go ugh until they taste it and go yum can I have some more?
Take 12 chicken drumsticks/thighs.Coca cola(not diet),Tomato ketchup,Worcester sauce,Garlic,Hp sauce,Salt and Pepper.
1-In a large jug pour equal quantities of coke and tomato ketchup.Add minced garlic,a dash of worcester,HP,and a good shake of salt and pepper.Whisk together until well mixed.
Roast chicken for 30 mins in oven uncovered.Drain all fat out of tray.Pour the mixture over the chicken and place uncovered back into oven gas 5/190 for approx 30-40mins.Baste and turn chicken halfway through. The coke mixture goes thick and makes a lovely, sticky barbecue glaze. This can be adapted by adding chilli or onions etc.
I guarantee everyone will love it but don't tell them how you did it beforehand or you'll get an ugh!!! |

Ok, this is the best banana cake recipe ever! So dense and moist!
INGREDIENTS 125g butter, softened
½ cup (110g) brown sugar
½ cup (110g) caster sugar
2 eggs
3 bananas, mashed (about 280g)
1 teaspoon vanilla extract
1½ cups (225g) self-raising flour
½ teaspoon bicarbonate of soda
pinch salt
2-3 tablespoons milk
METHOD
Preheat oven to 180°C (160°C fan-forced). Grease and line a 22cm cake tin.
Beat butter and sugars until pale and fluffy. Add eggs, one at a time, and beat until just combined.
Add mashed banana and vanilla and mix until combined.
Sift together flour, bicarbonate and salt together and and stir through with milk until well combined and mixture attains a dropping consistency.
Spoon cake batter into prepared cake tin and smooth the top. Bake in pre-heated oven for 40 mins or until well risen and coming away from the sides of the tin. Test with a skewer to see if it is cooked – the skewer should come out clean.
Remove cake from oven and stand 5 minutes in the tin before turning it onto a wire rack to cool.
I added a cream cheese icing to this. Superb. I make it with 125g philly cream cheese, a few tablespoons of icing and a drizzle of lemon juice. Basically just add and mix till you get your taste.
Happy eating! |
