Banana Cake

Ok, this is the best banana cake recipe ever! So dense and moist!

INGREDIENTS 125g butter, softened
½ cup (110g) brown sugar
½ cup (110g) caster sugar
2 eggs
3 bananas, mashed (about 280g)
1 teaspoon vanilla extract
1½ cups (225g) self-raising flour
½ teaspoon bicarbonate of soda
pinch salt
2-3 tablespoons milk

  METHOD
  Preheat oven to 180°C (160°C fan-forced). Grease and line a 22cm cake tin.

Beat butter and sugars until pale and fluffy. Add eggs, one at a time, and beat until just combined.

Add mashed banana and vanilla and mix until combined.

Sift together flour, bicarbonate and salt together and and stir through with milk until well combined and mixture attains a dropping consistency.

Spoon cake batter into prepared cake tin and smooth the top. Bake in pre-heated oven for 40 mins or until well risen and coming away from the sides of the tin. Test with a skewer to see if it is cooked – the skewer should come out clean.

Remove cake from oven and stand 5 minutes in the tin before turning it onto a wire rack to cool.

I added a cream cheese icing to this. Superb. I make it with 125g philly cream cheese, a few tablespoons of icing and a drizzle of lemon juice. Basically just add and mix till you get your taste.

I have a banana bread recipe too. It's part of a chocolate lovers recipe book so it has chocolate chips on it. Yum!!  My recipe is pretty big though and requires 8 bananas.

But banana bread/cake is yummy no matter how you make it!

Add it Izzy, people can always just halve or alter the reciepe if it seems too big! You never know, someone might just be waiting for it!

I love adding choc to my banana cake, But I'll add choc to anything!!

Wow, thanks this sounds great!  I have been looking for a good  banana recipe as I have some bananas going very off.   I will give it a try tomorrow (hopefully i have everything) and will let you know how I go.

Oh I cant explain how great it is, with 3 bananas I thought it could be over the top but it wasnt. Definately let us know how you like it, but I have to say in our oven I cooked it for a little less time then it says.

OMG, I have just finished making the cake and eating it.  It is soooo gooodd.  The cake was very easy to make.  And the icing is to die for in fact the whole cake is to die for.  I can't explain how good the cake is!

I have to add that I didn't mash the bananas just borke them up and I also didn't have any iceing sugar for the icing so I used caster sugar instead.  It didn't matter 'cause the cake was so yummy

I mashed 2 of them and then just chunked up the 3rd, worked great as then sometimes you got a big hit of bannana.

Thats great that the caster sugar worked as well, good tip for if you dont have the icing sugar onhand.

I am glad that you liked it as much as I did!!
