A quick and simple Honey Chicken recipe which my kids love 
Serves approx. 4
Ingredients
Approx. 2-3 chicken breasts fillets (depending on size and how many people you want to feed...lol)
2-3 eggs beaten
Approx. 1- 1 1/2 cup corn flour
Approx. 5 tablespoons of honey
Some seaseme seeds
Approx. 2-3 tablespoons of oil for frying
Instructions
1. Cut chicken into cubes or strips and place into the bowl with beaten eggs.
2. Start heating the oil in frying pan in medium to high heat.
3. When ready to start frying, dip each chicken piece into corn flour and start to fry. Just watch them as you put in the remaining pieces. The chic pieces that are starting to go golden colour you can turn them around with the tongs so the other side can cook. If necessary you can add more oil for frying.
4. Continue frying til all the chicken is golden brown colour and has cooked through. If there seems to be alot of oil in pan just drain that away. You need to have at least 1 tablespoon of oil in pain.
5. Then add the honey, you can add more honey if it isnt enough and stir through chicken til its all coated.
6. Finally sprinkle some seaseme seeds on top.
I didnt realise how hard it is to try and write out the recipe cause i have this in my head... LOL...

DH bought me an icecream maker last year. After reading the instruction manual and being well freaked out at the long preparation times it got put in the cupboard for a while, until a friend told me a very simple and healthy recipe. Now it gets used 2x a week or more! And we dont need to buy unhealthy shop icecream any more as the kids prefer it! If you dont have an icecream maker I guess you could either put it in the freezer and stir it regularly, or serve it up as fruit yoghurt!
Half a large tin of pureed mango pulp (750ml tin)
Half a large tub of Greek Yoghurt (600ml pot)
I mashed banana.
(Optional) Some double cream.
Mix together, pour in icecream maker, leave to freeze while you eat the first course. Easy peasy. It tasted divine, but really its just fruit yoghurt, ! Serves about 4 (or 2 if you can fight the kids off!).
I have also made it with purred blueberries/raspberres & sugar (sieved) instead of the mango, but that is more effort. |

Ingredients
- 2 Sheets of frozen puff pastry
- 4 eggs
- 1/4 cup of cream or milk
- 1 cup of cooked Chicken diced
- 1/2 cup of corn Kernels
- 1 cup of grated cheese
Defrost pastry sheets and preheat oven to 180deg
Cut circles from your pastry sheets with a scone cutter and carefully place into a cupcake pan (24)
place a bit of the dry ingredients into each pastry case
Whisk milk and egg together and pour on top
Cook for 10-15 mins or untill golden
GREAT served with salad or as a finger food

Summer is here in OZ and I think real Salad weather, Being so hot at Christmas we usually have alot of seafood for Christmas lunch including this. The dressing also works well for a seafood sauce.
You will need:
- about 4 stalk of Celery (this really depends on size)
- 250g peeled prawns
- 250g Seafood flakes (can usually b found in deli sections)
- 1/4 cup of chopped parsley (optional)
Chop all ingredients leaving prawns whole and place in a bowl
Dressing
- small jar of mayonaise (use light if worried abou cals)
- 1/4 cup of tomato sauce
- 1/2` tsp mild curry powder
- a dollop of tickened cream
Mix all ingrediens together, you are looking to reach a nice pink colour so if it tends to look a bit pale just gradually add extra tomato sauce. Mix in with Seafood and serve
I sometimes add pasta too. The dressing measurement I used for estimate and often just do the taste test to see if more of sauce or mayo is required

My Dad made this for my kids tonight and they enjoyed it.
Basically lightly fry some diced Ham, diced tomato, diced onion or chives and when it is cooked mix in some eggs and grated Cheese and leave on heat till eggs cooked. Nice with toast.
I have also had this when I was younger and my Dad also cooked it with left-over vegetables or meat and sometimes tinned Spaghetti.
This is not the greatest looking dish but tastes 100 times better then look |

Family recipe
6oz butter
6oz plain flour
2 oz custard powder
2oz icing sugar
pinch salt
1 teaspoon of vanilla can be added if wished
Cream butter and sugar.
Sift flour, custard powder an salt 3 times.
Graduallly mix into creamed butter and sugar.
Roll into balls and press with fork.
bake 12-15 170oC (until lightly brown) |

125g butter
1/2 cup sugar
1/2 cup brown sugar (lightlly pcked)
1/2 teaspoon vanilla
1 egg
1 3/4 cups s.r. flour
1/2 teaspoon salt
125g chocolate chips (you can use any type of chocolate, white, dark, milk)
60g walnuts or pecans chopped. (you could use chopped cashews if you want)
Cream together butter, sugar and vanilla. Beat egg lightly and add to mixture gradually and mix well. Add sifted flour, chocolate, salt and nuts. Mix well.
Roll teaspoon size mixture into ball and place on tray that has been greased. Allow for spreading.
cook 12 mins 190oC makes about 45 depending on size

A great I dea for finger food for little ones and entertainers is to make quiches in Muffin or Patty Cake tins. |

Great with BBQ
You will Need
- Pie or casserole dish
- 6 large potaoes (or more for bigger size). peeled and sliced thinley
- 6 Rashes of bacon. Diced
- 2 cloves of garlic. diced finely or crushed
- 1 Large Onion. Diced
- Grated Cheese
- thickened Cream
- Preheat Oven to 180degC
- Layer all the ingredients into the dish leaving the cream
- make sure the potatoes are spread evenly with each layer. Once reached the top pour crem to it comes up to just below the top layer
- Finish off with grated Cheese on top and place in the oven and cook untill Cheese is brown and a fork inserts easy.
Enjoy as a side dish, not many kids don't enjoy it! |

Pre school age children and upwards love making these. Can be made in advance.
You will need:
- Bamboo or Metal Skewers
- Chicken, Lamb, Ham, Beef, prawns or Fish fillet cut into cubes (or several)
- Vegetable Options may include : Mushrooms, Capsicum, Carrot (but cooks uneven), Pineapple, Tomato, Onion, Zucchini, Button Squash, Baby Corn etc.
- Marinade if you wish (I usually use Oyster Sauce, it is all purpose)
- Soak Bamboo skewers in water for at least 1/2 an hour (this stops them from splintering
- Cut all decided vegetables and/or meat in to cubes or squares doesnt matter too much the size as long as all roughly the same size
- Grab a skewer and push through the middle of each cube rotating meat and vege and continue untill the point of the skewer is reached.
- make them as colourful you like and try different variations.
- put in a suitable container and drizzle your favourite sauce over them. Cover and refrigerate for at least an hour.
My children love making these and picking out there favourite ingredients to fill their skewer, just take caution with the harder veges, they will need assistance because is bit hard for little ones to push the skewer through and could hurt themselves.
GREAT FOR A SUMMER BBQ!!
