A bit about me and my family...I sort of did that in my first blog entry. I guess I should have done it here.
I am a thirty something mother of 2 gorgeous girls, ages 7 and 3. I've been happily married for 14 yrs (although we've technically been together for 20 yrs, but who is counting). We are blessed to live in beautiful and sunny southern California. We live close to and love going to the beach year-round. We also love American college football...go USC trojans!!!! I'm a pastry chef by profession, professional trained at the California Culinary Academy in San Francisco after graduating college with a degree in business. For work, I specialize in wedding and special occasion cakes and desserts and have been doing so for over 10 yrs now. However, that is secondary to my first job of stay-at-home Mom which I try and balance by doing the baking thing part time now. I love reading great novels, writing and spending time doing creative projects with my kids. |

My daughter came home from school today (1st grade) and told me that the girl who sits next to her in class is constantly cheating off her work. Every Friday is test day (spelling and math) and each child puts up a "privacy folder" to conceal their test answers. However, the girl who sits next to her either leans back in her chair to peak or looks over the top of the folder as soon as the teacher turns her back. I've asked my daughter if she's mentioned it to her teacher, but she said she hasn't b/c she doesn't want to come off as a taddler. Since I volunteer in her class one day a week, I know the little 'cheater' in question. I am wondering if I should email the teacher, just casually mention it next time I'm in class or just butt out. It really bothers my daughter, so I think I should say something. I've suggested she cover her answers with her hand after she's written them, but as she so keenly pointed out, her little hand cannot cover the entire page of sentences and equations. Anyone with any thoughts or ideas, feel free to comment. |

Okay, so this is my first Minti Blog entry. I used to come to this site, but then stopped when life got too crazy. I have never written a blog before, so I just decided to 'dive in head first' and go for it.
Aside from being a Mom of two absolutely beautiful little girls, I am a Pastry Chef and self-professed chocoholic. A piece of chocolate everyday, keeps the grouchies away. That is the motto in our family and we embrace our addiction (but manage it with moderation). I'd rather have one small square of really good quality dark chocolate each day than a huge piece of pie or some other sugary dessert. I start and end each day with chocolate of some sort and make no apologies for it. My girlfriends wonder how I do it and still tmanage to weight (110lbs) the same as I was in high school (20 yrs ago), especially given my occupation. Here is my secret: Eat a healthy vegetarian diet, avoid junk food, fast food, walk atleast 30 minutes each day and indulged in a small amount of that thing you love (in my case Chocolate). Being a Pastry Chef for over 10 yrs, I've learned to treat my food products, creations, ingredients as "product" and don't snack on them while working. I give away extra cake or excess desserts to friends, neighbors, family, etc so I don't get in a routine of eating them, except occasionally. Anyway, that is a little about little old me. If you got any baking /cooking questions, feel free to post...I'll be happy to help. Thanks for stopping by and having a read.
