 Would love to start a recipe exchange with all of you. I didn't know wether I should write this on a blog or under advice. Well, here I go...
I am not very creative when it comes to cooking and most of the time I end up cooking something that only my son will eat. My husband doesn't eat anything I make for our son. I have to almost always make something for us separately. Just was thinking that maybe we can all share some healthy recipes that our children love. Emanuel (4years old) has all of a sudden become a picky eater and also just wants to have the same thing for dinner all the time. I am trying to gather quick 20 minute recipes that kids/adults love for breakfast, lunch, dinner or what ever you can share would be great. Below is one recipe that Emanuel loves for dinner:
This "Chicken Little (Nuggets)" recipe I got from online somewhere and Emanuel has loved it ever since I made it. I decided to make it on my own rather than buying already pre-made one's from COSCO especially since this is a much healthier choice baking instead of frying.
What you need:
1/2 cup finely chopped peanuts
or almonds
1/2 cup cornflake crumbs
1-1/2 tsp dried parsley flakes
3/4 tsp onion powder
3/4 tsp paprika
3/4 tsp dried basil
1 lb boneless chicken breast
1/3 cup plain yogurt
serve with plum sauce or honey
What to do:
Mix peanuts, crumbs and seasonings on sheet of waxed paper. Cut chicken into strips about 1 1/4" (2 cm) wide. Dip chicken strips into yogurt then into crumb mixture to coat. Place on foil-lined baking sheet. Bake at 425°F (220°C) for 4 minutes. Turn strips over and bake 4-6 minutes longer. Serve with plum sauce or honey.
I still need to read this recipe in order to do it haven't memorized it yet (Cooking is something I hate doing but with lots of recipes from everyone would help).
