Hi there does anyone know of any exciting recipies for veges,evey day its the same boring combinations. peas,corn and carrot or broccoli,peas and pumpkin. apart from adding some lovely cheese sauces from coles or somewhere what else can i do. and does anybody know how to make vegetable fritters?

I couldn't find vegetable fritters but I found vegetable piklets (recipe below)  and a great site full of ideas and recipes to make vegetables exciting. The site is http://www.gofor2and5.com.au/

Vegetable Pikelets
1 small zucchini grated
1 carrot grated (or equivalent amount of pumpkin)
1 tablespoon orange juice
1/2 cup self raising flour
1/2 cup wholemeal self raising flour
1 tablespoon brown sugar
1 egg
3/4 cup milk
1/2 teaspoon margarine

Cook zucchini and carrot with orange juice in pan or microwave until tender.
Put flours in a bowl and stir in sugar, egg and milk.
Mix in cooked vegetables.
Heat frypan and lightly grease with margarine.
Drop tablespoons of mixture into pan.
When bubbles appear turn and brown the other side

A few easy veg ideas

Good post to remind everyone about 2 fruit and 5 veg but in our house hold we use more than that as there are so many inexpensive vegies and fruits that are easily added to the nightly meal like... peas, corn, brocoli, cauliflower, carrot, swede, sweet potato, potato, pumpkin, parsnip to name a few and if you like desert after the evening meal try a fruit salad with ice cream or a berry pie with custard there are so many possibilities the combos are endless!

The sweetest veg

My son and I love the sweet vegies pumpkin and carrot they really are the sweetest of all vegies and are good for you wth many vitimins and minerals, so if your kids like sweet tasting foods try these vegies, this is why pumpkin is probably used in scones!
