Vegees in your child's day

As I mentioned in the ideas for 'fruit in your child's day' article, it is recommended that we eat 2 fruit, 5 veg, so here is some ideas for eating enough vegetables in a day. I am vegetarian, so i have no trouble eating enough fruit and vegees but it can
be difficult making sure the kids are eating enough.

Breakfast

  • top toast with mushroom, tomato, capsicum and/or sweet corn and put under the grill
  • Chop up vegees to put in crepes
  • vegees on toast with cheese or egg

Snacks

  • make mini pizzas with diced vegees and reduced fat cheese on English muffins or crumpets
  • carrot and celery sticks and capsicum strips make easy snacks
In meals

  • My favourite is the idea of making vegetarian pizzas together as a family - children are also more likely to eat it if they are involved in the making of meals.
  • add vegees to soups and noodles
  • always serve main meals with cooked vegees or salad
  • the fave meal at our house is pasta - I add vegees to the sauce, such as zucchini, mushroom and capsicum

A healthy recipe to try - For a snack or side chop up potato, kumara, pumpkin into wedges, microwave, mix with a little oil and seasoning and grill until crisp.
Very yummy!  All this talk of food is making me hungry!

You can always sneak veggies into mince in Shephard's pie, spag bol etc. Good ideas!

Yummy crapes, asparagus, swiss cheese, hollendaise sauce (and if you like throw in some ham).

fruit and vegies.
Liam has no problems with eating fruit and veg. he loves it.  in fact, his fav at the moment is carrot and apple slices. its a cool healthy snakc and is great with his teething+*.-+* - also doesnt make a massive mess on the carpet if he drops it somewhere in his travels.

scones
another way to get vegies into kids is puting them in scones, i make pumpkin scones all the time (each scone is classed as one serve of vegies i've been told) i have 5 children so i pack them in freezer bags each with 5 per bag, then whenever the kids want one i pull a pack out of the freezer and stick em in the microwave or let them defrost by themselves, my kids love them and after all these years of makeing them they still havn't got sick of em, also i cut mine out with a fancy cutter
