carrot,cheese and tomato risotto.

40g (1 1/2oz)chopped onion

150g (50z) carrots peeled n sliced.

300ml (10fl oz) boiling h2o (WATER)

3 rire tomatoes (approx.200g/70z),skinned,deseeded and chopped.

50g (2oz) grated cheedar cheese.

Saute the onions in half the butter until softened.

stir in the rice until will coated, then add thec carrots.

pour over the boiling water ,bring back to the boil, then cover the pan with a lid and simmer for 15 -20 mins until the rice is cooked and the carrots are tender.

if necessary ,top up with more water .

Meanwhile ,melt the remaining butter in a small pan add the tomatoes and saute for 2-3mins until mushy.stir in the cheese until melted.the water from the rice should have been absorbed  but, if not drain off any excess.stir the tomato and cheese mix ,into the cooked rice.
