frozen dinner ideas??

Hey, I would love to come up with some dinners that freeze well! Anyone have any good ideas? - I've got lasagna and Chili. Oh and I need tips on storage too!!

I'm a big fan of cooking a big batch of stuff and then taking a break every other night for a week or two. We usually alternate frozen meal, fresh meal, and that suits us well.

I do two types of meals.

First batch - microwave meals

Examples - rice and mince

- spag bol

- rice, chicken, sauce and veggies

- soups (all kinds)  I just freeze in Tupperware and nuke it in the microwave. I also take some of these to work for lunches (not that I can remember the last time I sat down to eat at work!)

The other sort is things like pasta bakes, shephards pie (my man's favourite!), lasagnes etc. The type of dish which you want to heat up in the oven, not the microwave. I freeze these either in Pyrex dishes or disposable foil pie dishes.

Pyrex dishes are a bit pricey, so I'm always on the look out at sales and op shops. The new ones with the plastic seals are great for freezing. The foil pie tins are also good if I'm giving a frozen meal to someone. If you're bereaved or jsut had a new baby, you don't want to be worrying about returning casserole dishes!

I freeze almost anything that is left over - pretty much along the lines of everyone elses comments above.  I even cook extra vegies and freeze them for quick and easy vegie sides to meals I may cook through the month.  Particularly good if you get hold of bulk vegies at cheaper prices.  If I have left-over chinese, I portion these out among take-away containers on top of either leftover fried rice, or will make some more boiled rice for this purpose.  If you are into reusing and recycling, just wash, keep and use containers from meals you have bought.  They will last a few times before they start to wear.  I have found that reheating works best if you pop it into the fridge to start to defrost the night before, then reheat in the microwave the next day (best if you use part power for a little longer, instead of 100% as this tends to nuke it on the outside and leave it a little cold in the centre).  Good luck with it - hope it saves you some time.

Umm spaghetti bolognaise freezes great, especially when stored in the chinese containers!
Also you could try blanching vegetables and freezing them (heaps of different veges to choose from) and then when it comes to cooking time, just put them in a microwave safe dish on high for a couple of minutes!
Ummmm casseroles and soups are excellent for the winter days!
thats about all i can think of though!
Oh and quiche! Quiche are good, cook a few family size quiches and pack them in plastic bags or plastic round containers, they freeze great!

Well I always freeze my chicken soup and spagetti sauce.  I have froze cabbage rolls before (no sauce just he rolls) and my MIL makes chicken fajita's and freezes them then her son mircowaves them as he wants them.

There is chicken a la king, beef stew, meat balls, soups, stir fry, u can stuffed chicken fillet (sliced in middle and stuff with slice of ham and cheese, or with fried mushrooms and herbs) cook and after it cooled down u just freeze. Good luck.

Almost anything will freeze for dinners. Fried rice is one not mentioned. Any stir frys, casseroles. Mashed veges do not feeze well and come out soggy in my expereince.

I often freeze the following meals in single serve sizes for my son for work or for those nights I just don't want to cook... 

Sweet & sour chicken / pork
Satay beef / chicken / Pork
Tuna Mornay
Apricot Chicken

Rice or pasta on the side... I  quickly prepare about 10 minutes before it's needed...

For the past 5 years I have cooked extra's to "Crib Up" for my hubby to take to work & micro-wave there.  I buy in bulk chinese food style plastic containers as hubby had a habbit of loosing tupperware .

Unlike the other comment I have had much success with freezing spaghetti pasta.  I would make a giant bolognaise up with my pasta I drain it and then whilst it's hot I add a big dollop of margarine and a heaped tea spoon of (from a jar) crushed garlic, and coat every strained with this mix, maybe that makes the difference, who knows, but when I put the pasta in the bottom of the container the meat sauce on top then a half handful of grated cheese I wait for it all to cool propperly, lid it and pop it straight in the freezer, he then cracks the lid at work & pops it in the micro-wave & has a very nice lunch or dinner at work.  By the time he heats it it has thawed out by the way, maybe that helps too.

I have done the same with roast chicken meals WITH gravy on the top, roasted pumpkin, potatoes & carrots with peas always went down a treat.  mashed potatoe can be tricky to re-heat and must be stone cold before lidding and freezing or it goes watery, but it can be done.  I have done braised sausages and or stews on mashes spuds, potatoe and tuna pie or sheppards pie, roast lamb meals. It'd be easier to tell you what I havent frozen successfully really.

Next time you are doing the shopping take a pad and pen and write down the combo's on the frozen meals liek the Macain ones etc.  You'll get some good idea's and the proof of the freeze-ability is right there tried & tested.

Pate Chinios.

Mince Meat.... 1 Can cream corn..... 1 can of corn..... Mashed potato...

This is Quebec's version of Shepards pie...

Brown the meat (add an onion if you wish)
When meat is browned you stick it in a baking dish... Flatten it out, on top of that flatten out both cans of corn, one on top of the other.. Then on top of that add the mashed potato... Cook it up for about 45 minutes.. About 10 minutes before you take it out of the oven if you please put some cheese on top just for a little added flavor...

Take it out, wait for it to cool down then place in the freezer!   My family loves this when I cook it.. :)

* Spaghetti bolognese sauce freezes well - the pasta doesn't though!Best to cook the pasta just prior to use! Storage- You can cool and freeze in serving sizes in freezer bags. Put into a large plastic stoarage container labelled Spag. bol and just remove bags to defrost as needed. Otherwise get a stack of those disposable (will last through a few re-uses!) take away style plastic containers.

* Casserole always freezes well - beef, chicken or lamb with vegetables

* Curry sauce - beef, lamb,chicken and vegetables. Again, the rice does not freeze well, but it only takes 10 minutes to cook some rice.

* When I do a large roast  beef or lamb- I slice off enough for a few serves - and freeze slices in bags in individual serves. All I have to do then is steam some vegies for another meal and defrost and reheat meat in the microwave.

THe key is to LABEL EVERYTHING!!!!

I absolutely agree with labelling. I often cook double of anything I know will freeze well - pasta sauces (Anything tomato based but not cream based), bolognese, casseroles etc. But I'm really good at forgetting to label them -  or I'm sure I will know what is in the container - when I know deep down that once things are frozen they look totally different!  There have been a few times (well more than a few if I'm honest!) when I have defrosted what I was sure was one dish - only to find it is something completely different & have to a quick re-think for dinner!  My new year's resolution is not to put anything into the freezer unless it has a label - so far I'm doing well - but it is only January still !!!!!
