I'm a big fan of cooking a big batch of stuff and then taking a break every other night for a week or two. We usually alternate frozen meal, fresh meal, and that suits us well. I do two types of meals.
First batch - microwave meals
Examples - rice and mince
- spag bol
- rice, chicken, sauce and veggies
- soups (all kinds) I just freeze in Tupperware and nuke it in the microwave. I also take some of these to work for lunches (not that I can remember the last time I sat down to eat at work!) The other sort is things like pasta bakes, shephards pie (my man's favourite!), lasagnes etc. The type of dish which you want to heat up in the oven, not the microwave. I freeze these either in Pyrex dishes or disposable foil pie dishes. Pyrex dishes are a bit pricey, so I'm always on the look out at sales and op shops. The new ones with the plastic seals are great for freezing. The foil pie tins are also good if I'm giving a frozen meal to someone. If you're bereaved or jsut had a new baby, you don't want to be worrying about returning casserole dishes!

frozen dinner ideas??
For the past 5 years I have cooked extra's to "Crib Up" for my hubby to take to work & micro-wave there. I buy in bulk chinese food style plastic containers as hubby had a habbit of loosing tupperware .
Unlike the other comment I have had much success with freezing spaghetti pasta. I would make a giant bolognaise up with my pasta I drain it and then whilst it's hot I add a big dollop of margarine and a heaped tea spoon of (from a jar) crushed garlic, and coat every strained with this mix, maybe that makes the difference, who knows, but when I put the pasta in the bottom of the container the meat sauce on top then a half handful of grated cheese I wait for it all to cool propperly, lid it and pop it straight in the freezer, he then cracks the lid at work & pops it in the micro-wave & has a very nice lunch or dinner at work. By the time he heats it it has thawed out by the way, maybe that helps too.
I have done the same with roast chicken meals WITH gravy on the top, roasted pumpkin, potatoes & carrots with peas always went down a treat. mashed potatoe can be tricky to re-heat and must be stone cold before lidding and freezing or it goes watery, but it can be done. I have done braised sausages and or stews on mashes spuds, potatoe and tuna pie or sheppards pie, roast lamb meals. It'd be easier to tell you what I havent frozen successfully really.
Next time you are doing the shopping take a pad and pen and write down the combo's on the frozen meals liek the Macain ones etc. You'll get some good idea's and the proof of the freeze-ability is right there tried & tested.
