there are a couple of Mom in NYC groups where mums and their kids meet up and go around NYC together doing kid friendly activities

I was just there with my 26 month old and we rode the subway into the city.  The subway ride is always fascinating, in my opinion, it's different.  There's plenty to do in Central Park, street performers, stroll in the park, roller skating/ice skating rink.  There's also a dog park in there.  There are tons of museums in midtown, East side. There is a children's museum in Brooklyn too (the name escapes me at the moment).  You can always visit the Empire States Building, or go to the World Trade Center site. And of course, there's tons of shopping  and good eats too!  Sorry I can't give you any info on babysitting while you're there.  Good luck and have fun!

 I think the best entertainment for a kid like yours is music , food and story telling.

Music that can make him dance ( as an exercise), music that can make him sleep. Start to introduce different kind of taste and veggies..When my kids got this age they already fond of eating veggies.Story telling with action to develop their emotions and action rather than showing him cd's of barney and bob the builder...

maybe take some of his favorite toys and books movies and explain where you are going that you are going on the plain maybe show him a plane also read him a story that involves planes.take croyns and paper and sing songs

As long as you have some toys and try and involve him in it all and play with him he should be fine and as for the nanny what state and country do you live?
