Meals

Hi everyone, I was just after some ideas of what meals to make the family that our 10 month old can also have. She eats pasta and vege's and mince but we're getting sick of the same thing all the time. Any recipes for lunch and dinner would be great. Especially any that our overly fussy 7yr old will enjoy as well. Thanks

Re: Meals
Quiche, was very popular with my 10 month old and is Super easy to make.  I just sprayed my round glass dish, with oil, cut up a tomato in slices covered the bottom of the dish, add some bacon (if you want) add some cheese, add some mixed herbs and some garlic (you can put in anything you want)  mix up about 4-5 eggs add a bit of milk (not much) and pour all over everything in the dish, it will grow and the stuff on the bottom will rise so the cheeses and herbs are on the top, tomato in the centre...my bub and hubby loved it.

Re: Meals

This is a fav with my son too, just be careful with the eggs if you haven't introduced them yet - whites first a teaspoon then work up to the whole white, when they can eat the whole white you can start to add a little yolk at a time until they can eat a whole egg.

Re: Meals
Hi, rissotto is great. I had a great recipe when my older son was a baby but I can't find it anywhere! It was a chicken and mushroom risotto with stock (salt reduced) and milk but that's all I can remember - sorry. I just look up any rissotto recipe and change it to suit the family.

Re: Meals

Another reciepe is fruity couscous. This you can make in a bigger quantity and use as a dessert for you and your son as well.

Ingredients: 3/4 cup breastmilk/formula/full cream milk; 1 tsp cous cous; 1/2 cup purees fruit; pinch ground cinnamon.

Method: combine milk, couscous adn cinnamon in a pan, simmer stirring for about 12 mins or untill thickened.  Allow to cool and serve with the fruit swirled through.

Re: Meals

One of my favourite recipes at the moment is for vegetable fritters, basically you use whatever is in your cupboard,

Ingredients: 1x Potato, 1x Zucchini, 1x carrot, 1x sweet potato, whatever your child eats really. 1 ess, 1/4 cup flour, dollop of milk.

Grate  the vegies, it is a good idea to par boil or steam them first.
Mix all ingredients in a bowl, it should be a semi-sticky mess. Add another egg if you think it needs it.
Cook in a hot pan sprayed with oil, flipping when golden and crunchy. You can make these as little pancakes or as a whole pan and cut into pieces.

Use vegies that your 7yo likes as well, This I usually give to my daughter after some much at dinner and we have a fritter as a side dish to our meal.

Hope you like it!

Re: Meals
How about casseroles, or even a meal in a slow cooker, with beef or chicken.  My daughter loves her rice, and we do lots of stirfries too, making sure the vegies are nice and soft.  As for a quick lunch, I give my daughter 2 minute noodles sometimes, but as they're not the most nutritious, add an egg and beat through when the noodles are cooked.
