Help needed

Hi guys,

As most of you know my 22 month old is allergic to HEAPS of food and its freally hard to keep food interesting ..  BUT my biggest prob is that she is turning 2 in the 1st May and I so want to be able to find her a safe cake recipe . .

SO does anyone have a cake recipe that is egg, dairy and gluten free! ! ! It must also be nut free . .

Hi there.. Just found this for you, and thought maybe they have this product in our stores..

Also if you are heading to your Mils there is a shop that sells organic products at Mowbray,. on the main street next door to ozzie pizza..

here is a recipe i found, its egg, dairy, nut free.. and its a chocolate cake, and u should be able to get the choc bits at the health store,,

INGREDIENTS
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup white sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 5 tablespoons vegetable oil
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • 1 cup cold water
  • 1/2 cup semi-sweet chocolate chips

 

DIRECTIONS
  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan.
  2. In a large bowl, combine flour, salt, sugar, cocoa powder, and baking soda. Mix well with a fork, then stir in oil, vinegar, and vanilla extract. When dry ingredients are thoroughly moistened, pour in cold water and stir until batter is smooth. Stir in chocolate chips and pour batter into prepared pan.

Bake in preheated oven for 30 to 35 minutes, until a toothpick inserted in center comes out clean. Cool on a rack.

or this one... egg less choc cake

 

INGREDIENTS
  • 4 1/2 cups sifted all-purpose flour
  • 3 cups white sugar
  • 1 cup unsweetened cocoa powder
  • 1 cup vegetable oil
  • 3 cups water
  • 3 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons vanilla extract

  DIRECTIONS
  1. Preheat oven to 350 degrees F (175 degrees C), grease and flour a 9x13 inch pan.
  2. In a large bowl, sift together flour, cocoa powder, soda and salt. Add sugar and mix together.
  3. Add oil, water and vanilla and mix thoroughly.
  4. Pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 1 hour or until toothpick inserted in center comes out clean.

Also if you dont want to bake your own,, coles and woolworths have a aisle with cake mixs with these sort of requirements..

I have sent you some recipes to your mailbox. Hopefully one of them will be able to be used. I like the idea of cupcakes for cakes at that age. Make a batch of cupcakes and put different coloured icing on, and arrange on a plate.

hello darl im not sure if this is any good but wat abot if u were to buy a unfilled sponge from the supermarket im not sure if they are all the dariy free ect but it was just a thought. and the u could decorate it urself. sry if this is no help.

Not sure if your cherub can have soy???? If so, maybe get a tub of soy icecream, turn out on a dish and decorate with sprinkles etc as an icecream cake! Freeze on the plate and bring out just before " Happy Birthday " and pop in the candles-Just a thought!

Hi honey,

Thanks for the idea BUT soy is a no no as well . . .  Poor kid is on prescription milk as a back up. some days she barely eats anything and if it weren't for her prescription milk then she would be quite unhealthy. . .  Life is not all bad though as she is a fruit addict . .

Last year I made her a jelly concoction but she doesn't like jelly . ..  :(

Maybe a frozen fruit sorbet!!!! You can get some fancy moulds to set it in and decorate with fresh strawberries! Or, could you make like a banana and chocolate smoothie using her milk, beat it as you do to make homemade icecream, partly freeze and then beat againto aerate , set in freezer and decorate! If not, at least it is a couple of snack ideas for her - just set mixtures in those re-usable ice block containers!
