Re: Vegie Q

I peel my potatoes for mash and roasting but if I boil them I leave the skin on especially if we are having corned meat, I peel carrots because they have a bitter taste. Pumpkins I peel if mashing but leave skin on if roasting they are so tasty like that so I do a bit of both.

Re: Vegie Q

I prefer my veggies unpeeled!  And preferably fresh from the ground, lightly rinsed and with a touch of dirt left on it!  I remember having carrots that way when I was a child and I loved them!  Sadly, things are different these days, and unless you grow them yourself, you can't have that sort of experience.

The recommendation these days is that you limit peeling your veggies, as most of the nutritional benefits are found just below the skin.  They also recommend that you only lightly cook the veggies to prevent nutrients from being thrown away.  Steaming and stir frying veggies are the 2 most healthy ways to have them.

Re: Vegie Q

I peel my carrots byt that's just a taste thing. I peel potatoes if I'm making mash, but we have jacket potatoes and unpeeled roast potatoes too.

I don't peel (except carrots) if I'm making a salad, and I don't peel apples etc. Most of the goodness is in the skin, so that's why I keep it on, but I guess it is just a matter of personal choice.

Re: Vegie Q

I always peel or scrape my vegies, and I don't think you are odd it is just a personal choice and most of us copy our mums and that is what my mum always did

No, you're NOT odd. I dont peel mine usually - time & goodness, etc etc!

Actually it seems far more odd to me for someone to "freak" at the sight of peel - comment perhaps but freak?

Re: Vegie Q

I don't peel my vegies either. This is something my parents taught me and I have continued with it for a couple of reasons:

1) We already lose some of the nutrients and vitamins by cooking or steaming vegetables so why compound that by peeling them. There is so much goodness in the peel (as you said)

2) When giving my son cooked vegies or fruit I wanted him to learn to chew (or at least gum) his food before swallowing, to really savour it and to get a great variety of flavour. So I always left the skin on for him and even at 8 months he was eating very chunky foods and not choking.

I'm sure you are washing the vegies well so feel free to leave the peeling. Plus, this saves so much time- people complain they don't have time to prepare food from scratch- we eat loads of fruit and veg every day and we manage to find the time coz we either eat it raw or cook it with peel on.

Enjoy!
